I have a few minutes of rest between the last of the bagels and the bread. So far I've gotten 3 dozen bagels done (2 plain, 1 sesame seed), a half dozen Asiago and half dozen poppy seed in the oven, the dough for 2 giant bagels on it's first proof, and the dough for 2 white and 2 wheat artisan bread loaves on their first proof. I think that's all i"m going to bring tomorrow.

Overall it's pretty easy to do the bagels. One load bakes, I divide the dough for the next. The bagels are done baking, I put them on a cooling rack, then shape and boil the next batch. There is usually less than 10 minutes between batches, and I'll get better with practice. One thing I need to continue is my purging of counterspace clutter. I'm able to manage because I'm the master of stacking containers. More counterspace would solve so many issues.

I still have a couple more hours of baking ahead of me, but overall I'm going to be done long before midnight. Not bad for my first baking spree for the market.

I know that I'm going to chicken out for tomorrow's not-so-pleasant-weather market. I can't wait to see a giant bagel in person.

Saw your stand, but not you at Farmer's market. Wonder if you could sell hot coffee (make a carafe) alongside bagels== just to up sales. This morning was just plain brrrzy any way you look at it.

I was probably running with the family to get coffee for my sister who worked the booth with me, or getting change (darned $20 bills). Sorry I missed you.

Man, I think the bank must have thought I was headed out for adult entertainment... I came armed with small bills and my change jar.
I came for produce, silly me (delusional me) so - I'll catch you another Sat morning.
Never mind the hot coffee suggestions - sounds like you did wonders with just bagels. Congrats on great opening (despite the brrrr).
