I'm following up on a theory I've seen. If you add sugar to the boil water for bagels, it acts as a binding agent for the topping. This would be a very good thing, because using eggs for a binding agent not only eliminates some vegetarian customers (not that I think vegans will be swarming the booth for bagels) but it's also a way to eliminate some expense.

So right now I have the dough for a half dozen plain bagels on the rise and nearly ready to divide. Half will be boiled in plain water, the other half in sugar water. We'll see how it affects the crust, and how well sesame seeds and such stick.

I had Nutella on a plain bagel tonight. It was heavenly. Too bad they don't come in 1 oz packets.

go to world market they have individual serving packets for sell. (1oz if i remember right)

He's right.
World market is the place, though you might be able to set up with Nutella as a distributor or some such thing.
