I have the first two batches of tomorrows order on it's first rise. I lucked out and was able to make two double batches of dough rather than several single batches, so they share proofing containers. That means less dishes.

While I was out buying a new headlight bulb for the van, I got some stacking cooling racks that will be handy for the bagel baking, and the movie The 300. Over muscled men fighting overwhelming odds. It has the same visual feel as Gladiator, but I like this movie much more.

I added garlic to one of the dough batches, so I can smell it faintly. In a couple hours, the baking will be like garlic incense for the entire house. Yum. I think that I can space out the baking without any problems, so that all the bagels are made in a timely fashion without the dough losing structural integrity. Consistency is important, especially when the customer gets many different bagels and has something to compare against.
