This batch of bread was interesting. I cut the recipe in half just because it called for 5-6 cups of flour, which is about 2 lbs and would have been a ridiculous amount just for dinner. I made 6 flatbreads, after shaping I added diced shallots, a pinch of cumin seed, and a pinch of kosher salt. Marz didn't care for the cumin flavor, I thought it was pretty good. Next time I'd add a touch of olive oil to the dough which makes it more elastic for shaping. What I thought was interesting is that the amount of water called for made this pretty much exactly the same as my default bread recipe, proving again that most bread is basically the same.|
I think that the olive oil would also keep the bread fresher for longer, without the oil it dries out pretty quick.
