Tomorrow begins Pari's first full week of school. I get to remember dropoff and pickup times, and early release on Wednesdays, and of course to make her lunch soon as I'm done with this entry. If this house doesn't get cleaner this week with the lack of Pari interruptions, then something is seriously wrong.

I've started a new series through Netflix, "The Wire". Less graphic and violent than "The Shield", but so far I'm interested after season 1 disc 1. I have it rotating with season 3 of CSI and season 2 of Rome.

I continue to experiment with the new bread recipe. I'm tentatively calling it Paddle Bread since its made with the paddle of the mixer rather than the dough hook. Today's experiment included using an overnight preferment straight from the fridge with high gluten flour. I think that the cold makes for a stiffer dough and a slower rise, plus the high gluten content works differently for this bread. The one proofing right now has some room temp preferment in it, we'll see if the gluten content and flavor is appreciably different. I like it because it's a great quick yeast bread to make, but the lack of preferment makes me need to do something different with it. We'll see how room temp preferment does, and I'll try a slightly different method soon, and with some wheat flour.
