Wow, I did up a simple loaf of sourdough just for a change of pace. I proofed it overnight in the fridge, it was increased in volume but nothing impressive. I shaped it and used a loaf pan, it filled out the pan after a couple hours but was barely risen a half inch above the top. Still not impressive. I just pulled a giant loaf mushroom out of the oven, damned impressive oven spring. My interest in sourdough has been cautiously rekindled, I just have to remember that it's slow to proof and apparently expands rapidly during baking (which is called "oven spring", hence the subject line.)

This holds promise.
