I just checked my preferments for tomorrow, the regular flour is puffed a bit, the wheat was near the top, and the rye was about to overflow the 4 cup container (only 5 oz of flour and 10 oz of water in this to begin with). I shook the cups to deflate the work of the yeast (hey, it would be kneaded out anyway) and we'll see how inflated it gets by tomorrow morning. Mental note, next time try it in the fridge to see both the rate of proofing and if it affects the flavor. I'm hoping a room temp overnight preferment will have lots of flavor, as opposed to the in the fridge overnight preferement. One advantage to prefermenting in the fridge is that you can let it sit for a couple days, on the counter you pretty much should use it the next day or the yeast will run out of food.
