After Monday's baked fish fiasco (don't bake fish, it comes out rubbery) I went back to the old standby of pan fried. Two huge basa fillets, with a coating of breadcrumbs that had just a touch of season salt and Mrs Dash (I think I'll skip the season salt next time, there is plenty of salt in the butter when I fry it), and topped with a nice gravy made from pan drippings with a bit of flour for thickener, veggie broth and a touch of lemon juice for zest. I really wanted to make a risotto to go with it, but Marz was headed out with the kids so time was of the essence. I also lacked the proper rice for a risotto (basmati rice just isn't good for risotto). So all ingredients are procured, tomorrow I'll cook up the last basa fillet (I highly recommend basa, it's like the budget orange ruffy) and some risotto based on this recipe http://www.recipezaar.com/99860 .

Now back to folding this mountain of laundry before bed.

I always bake fish

but I have fewer distractions because you need to watch it like a hawk. You have to leave it in until it is nearlly done, because the residual cooking goes on, too.

I love basa fried. It's actually a Vietnamese catfish so that's not a surprise. (farmed fish).

I baked fish not too long ago, and it wasn't rubbery. Although, I was checking it constantly so I could take it out as soon as it was flaky. That's easier to do when you don't have 2 mobile children to keep your eye on.
