Today we went to downtown KC, including Crown Center and the Plaza. I've lived in Lawrence for over 15 years, and have only been to the plaza a few times. The parking wasn't too bad once I saw that there are free garages everywhere. We had lunch at the California Pizza Kitchen, and walked around a bit.

Tonight I begin the quest for the decent cup of chai. I don't intend to make the perfect cup, that would just frustrate me. We hit the Merc, I got many fresh spices (most of them whole), and I'll start working on combinations and technique. I'm doing one in the coffee maker tonight just to dispose of the aged vanilla bean that has sat mummified in our spice rack for ages, and to start the ball rolling. Most of the chai recipes involve boiling the spices before steeping the tea leaves.

I'm keeping track of ratios, ingredients and technique in my kitchen notebook. Off to add honey and milk.

Update: Chai 1.0 is not too bad. I added honey, milk and sugar to mellow the taste, and it's not a bad start. I'm thinking that I can try a few spice combinations, and I suspect that I'll settle on something with only 4 spices to give it a good flavor. This batch had fennel seed, star anise, ground nutmeg, ground cinnamon, vanilla bean, cardamom pods, and cloves (I think that was everything) in a Darjeeling tea. Next batch I'll cut back a few spices and add sugared ginger, maybe a few peppercorns. I'm not fond of a peppery chai.
