I had to write this up anyway, so I'm putting it here to archive.
Quick Ciabatta Bread
18 oz bread flour 1 teaspoon salt 1 teaspoon instant yeast 1 teaspoon basil 1 teaspoon minced garlic 16 oz (2 cups) lukewarm water
Put dry ingredients into the bowl of your stand mixer and give them a few stirs to combine. Add water. Use paddle attachment on high, it will look like thick waffle batter for a bit. After about 5-7 minutes it will all come together and wrap around the paddle, this is when it's done. The dough has a rubbery texture and is very sticky. Transfer to an oiled container and let rise until triple in volume, 2-3 hours.
Preheat oven to 500 degrees. Coat your hands with olive oil (and a sheet pan if you want a work surface). Divide the dough into quarters and round them onto parchment lined sheet pans. Bake for 12 minutes. If you want to use them as pizza crusts, flatten and bake for 6 minutes, then top with sauce, cheese and toppings before baking another 6 minutes.
The dough is very wet, sticky and blobish, practice is needed in handling it. |
