I modified my pasta dough slightly for convenience. I could do this up on the mixer, but a bowl and spatula are easier to clean. There's enough olive oil in the dough that it isn't sticky and goes through the roller nicely. Serves four. 

Harold's Default Pasta Dough

5 oz all purpose flour
5 oz semolina flour
3 large eggs
1 teaspoon salt
1 teaspoon dried basil
olive oil (1-2 oz)

 Mix together all the dry ingredients. Crack the 3 eggs into a measuring cup (will fill between 5 and 6 oz). Pour in olive oil until it reaches 6 1/2 oz. Stir together with a fork, pour onto dry ingredients. Mix with a spatula or spoon to form into dough, then hand knead until most of the dry stuff is absorbed. Put the dough into a plastic bag and let rest.
