noodles... [Feb. 5th, 2011|11:15 am]

Marz got me a pasta machine for my birthday, today I made up two batches of noodle dough to try out for lunch. The first came out a bit crumbly, so I reduced the flour content by an ounce and made up a batch that was much more dough-like. It may be a little sticky after resting, but that is what dusting with flour before running through the machine is for. It's a hand crank machine, if we use it enough then we can get the optional motor later. Today I'll have the kids crank.

For my own reference, here is the experimental recipe that got good feedback on whatever recipe site I found it on. (I cut the original recipe in half, and measured it out on the scale since ounces is much more accurate than cups).

Crumbly-
6 oz AP flour
6 oz semolina flour
1/8 t salt
3 large eggs (6 oz)
1 T olive oil

Smoother-
5 oz AP flour
5 oz semolina flour
1/8 t salt
3 large eggs (6 oz)
1T olive oil
