 A trip up to Steve's Meats in Desoto has procured for us some ground buffalo (abbreviated "ground buff" on the package), a jar of honey, some farm eggs, a ham hock, and some ground goat. The goat will be making a special guest appearance in some chili within the next day or two, Marz is on her own with the ham hock, and the buffalo is frozen so no rush on that. 

The ranch we got the quarter cow from won't be processing their spring beef until May/June, so there is time to see where our supply is closer to then. Having a bunch of beef to plan meals around is helping with the food budget quite a bit, although it takes a bit of getting used to planning ahead so the beef can thaw. I've developed the habit of pulling up a couple steaks and some ground beef, then using it over the course of several days after it thaws. The stuff I pulled up yesterday wont' be fully thawed for another day or two. 

My biggest regret is that when the guy working register told me that the other guy was getting the goat to grind up and package for me, I couldn't think of a proper "get my goat" pun for the moment.
