Today's baking experiment includes two minor changes. The first is that I reduced the amount of yeast in the preferment to see how it affected the flavor. The second is that I used 1.5 lbs of flour for the batch of dough rather than my usual 2 lbs, because I think that's the amount that fits in my larger loaf pans. Why is this important? Because it would make larger, prettier loaves. It would be the first noticeable tweaks to my home loaf recipe in years. Which also means teaching myself the new measurements. My standard two loaf batch of dough has been ingrained on my memory for years, reducing it by 1/4 only takes some basic math but also means changing some very ingrained baking habits. I'll try to remember with a followup on the taste and if the amount is right.
