 Marz got herself a cold coffee press called a Toddy while shopping with her mom and the kids. It also makes tea, while reading through the directions the idea of brewing a tea concentrate with cold water for 12 hours sounded intriguing. So without using the press, I now have a half batch of their recommended ratio (they say 8 oz tea to 9 cups water, I did 4 oz tea to 4.5 cups plus some of my usual dried orange peel thrown in, this time 3/4 oz) on a cold steep in the kitchen in one of my half gallon pitchers, right next to another half gallon pitcher with preferment for tonight's baking in it. 

The directions also say a 1:7 ratio concentrate to water for the iced tea, we'll see how true that is. I suspect some experimentation will be involved, but if this works out I can make a concentrate good for several gallons. We go through a lot of iced tea, it only takes 3 minutes for a hot steep but a 12 hour cold steep is supposed to be a better taste.
