Even when baking for competition, I can't help but experiment. With a lump of challah dough sitting in front of me, preparing to divide it into quarters to be made into two loaves, I end up doing an experimental simple overhand knot with two of the strands, and a two strand braid with the others as intended. If the overhand knots work it would be a nice dough treatment for a variety of breads, but mostly the egg breads like challah.

When this batch is done, the white dough gets kneaded and we'll have a brief time for running errands before the next batch gets shaped.
