I have a favorite way to use cucumbers, tomatoes and onions from the garden if I don't have specific recipes planned for them. Take a cucumber, slice lengthwise, deseed and dice. Do the same with a medium or two small tomatoes. Dice a smallish or a portion of a larger onion. Drizzle on some vinaigrette or some vinegar and olive oil, dust with salt and pepper. Mix, and enjoy.

Just wish the peppers would produce so I could add them into the mix.

My peppers are exploding. Pulled about 30 more green anaheims this morning. 12 green bells. and dozens of cayenne, jalepeno, hot red peppers...
nothing else producing - but there are hundreds of green tomatoes teasing me. (and the zuchini was devoured by worms).
gifted cucumbers from someone - and trying to figure out a way to use them!

today: searching for a GREAT recipe I had for Chile relleno casserole (big hit) (from the Merc) to use up the anaheims and a bunch of tomatoes that were canned last summer...
