The smoker is fired up and loaded with poultry. Now I get to check the temp every once in awhile for consistency, I'm aiming between 225-250 average temp, and rotate the racks every hour or so. I've been bad about tracking my recipe, temp and times with bbq, so I really should either do entries and tag them or dig up a notebook to write stuff in.

I usually do an apple/hickory mix for the wood chips, but I'm out of hickory so it's all apple today. I tried cherry and didn't care for the flavor as much although it isn't bad. The maple chips are sitting there going "Give me red meat!" Soon enough maple chips, I'll try some pork and beef later this summer.
