i scream, you scream, we all scream, the neighbor calls the cops because of all the screaming... [Jun. 4th, 2010|05:31 pm]

I finally made a good batch of ice cream with my ice cream maker. I tried the other day, but the freezer above the fridge would take days to freeze the core properly. 24 hours in the deep freeze did the trick.

It's a combo of lactose free milk, sugar, vanilla, lemon juice and blackberries (can't remember if there were any other ingredients of note). My first attempt just stirred the ingredients because the core wasn't cold enough, so I fridged them and froze the core in the downstairs deep freeze. Now it's nicely frozen, and in the freezer to harden up a bit before dinner.

I'll have to see how soy milk works in it, and make the occasional batch for a treat. Long as I remember to store the core downstairs I can pretty much make the ice cream on demand.

I tried several batches of soy ice cream last year and they all sucked. Coconut milk makes really creamy awesome ice cream but I hate coconut. I plan to try almond milk this summer.

We have some almond milk to experiment with. Luckily Kiyan doesn't care for the cold, so he doesn't go after the ice cream. I am going to attempt some sorbets soon.
