The first batch will be hitting the water in a few moments. Demand for the less popular but basic flavors (sesame, poppy and plain) has increased to the point where I'm actually going to do a full dozen of all 3 this weekend. This also takes the pressure off me to figure out which flavors to make for the full 16 dozen (I have maybe 20 flavors total, and don't make all of them every weekend). So I have a slightly abbreviated selection (not doing blueberry, apricot or cherry almond, but have lemon ginger, cranberry orange and cinnamon raisin planned) but I'm also going to pair up the batches so I have one with plain dough and another that has the flavor in the dough, to see if doing it this way keeps the flavors easier to identify (lemon ginger and cranberry orange are obviously different before baking, but after you see mostly browned crust). I'm also going to see if putting in a little more flour helps with the texture of the sweets, the extra sugar loosens up the dough slightly so it loses a little loft.

And there goes the alarm, jut enough time to crank out one batch before getting Pari.

One of my life goals is to see that everyone on my flist who isn't carb free has a chance to taste my bagels. I should start working on that goal sometime soon. Luckily most of the locals have had them at least once, which knocks about a quarter of the people off the "to feed" list.

Also, speaking of your lemon bagels, Matt and I are getting up early and coming to the farmer's market tomorrow - is there any chance that you'd be willing/able to set aside a half dozen lemon ginger bagels for me? Pleeeeeeeeeeeease? If not, that is ok, we will just have to get there super early!

I can and I will. My policy is to hold them until 9am, after that unless you call (let me know if you need my number) they go back into general population. Sales don't start picking up until between 8-9am, so there is usually a pretty good selection until it is late in the 9am hour.
