I'll start off by saying that the texture of the emu egg scrambled was not to my taste, the remainder of it will end up as part of a madeline recipe.

So, just how big was the emu egg? A regular chicken egg (from my fridge) was 2.5 oz. The emu egg was 1 lb 6 oz. So this was equal to around 10 large chicken eggs. If you crack it open like a regular egg, you get green shell everywhere an in the egg. So I used a hacksaw to cut through most of the way on the air bubble end of the egg, where the membrane protected the contents. Then I washed off the dust and stuff, used a thin knife to pry off the end, and cut the membrane to dump the contents into a bowl. The shell is largely intact if I want to make something out of it later.

Wierd. For some reason I thought emu eggs were actually bigger. Wonder where I got that impression.

They do vary in size, mine I think was on the mid to smaller side of average. It's still freaking huge, and I need to use up the leftover egg today.

That is a weird-ass looking egg. Almost like a giant avocado.
