culinary success... [Dec. 23rd, 2008|05:05 pm]

After a lot of boiling and reducing, I got a little under 6 qts of stock. About 4 of that went into a rendition of the recipe I posted earlier today, although I used corn instead of peas, turkey instead of lamb, added garlic and skipped the lemon. So I had a turkey meatball veggie soup, which was excellent after the addition of salt so it had a savory platform to launch the flavor.

The meatballs are simple, ground turkey, rice, parsley, onion, garlic and spices. The soup had plenty of veggies in them so it was filling even without the meat (I detest when the liquid ratio is so high that you might as well drink most of the soup, I want substance!) Now I have 3 containers with meatballs and soup, plus enough soup left over that I may just add the shredded turkey from the wings used to the rest of the soup.

Enough culinary stuff, I'm done posting about the turkey soup stuff today. But the leftovers should last about 2 days with no problem.
