|Belizean Creole Bread

On Thursday, just before the mixer broke *sob*, I was doing up an experimental batch of Belizean Creole Bread. It's a pretty basic bread recipe, and when done reminded me very much of challah in texture and for the sweetness. The ingredient that makes it different? Coconut milk.|

Here's my recipe.
Belizean Creole Bread
1 can (about 12-14 oz) coconut milk
4 oz vegetable oil
about 4 oz water (enough so that combined with the coconut milk and oil it equals 20 oz)
2 lbs bread flour (I used high gluten flour, that's what I had on hand)
2 Tablespoons sugar
2 teaspoons instant yeast
1 teaspoon salt
Pour the coconut milk into a measuring container, most cans should be about 13.5 oz (the original recipe called for 12 oz, I just refuse to toss out an ounce for no reason), add the 4 oz of vegetable oil and add water until the total reaches 20 oz. Mix together with a spoon, if you want.
Put the dry goods into the mixer bowl, stir together with a whisk. Add the wet works, knead for 5 minutes with your dough hook. Pray to the patron saint of kitchen appliances (I'm going with Saint Elizabeth of Hungary, one of the patron saints of bakers) that your mixer doesn't break. Proof in a covered, greased container for 2 hours, divide in half, form into 2 round loaves, cover and proof another 2 hours, bake at 400 degrees for 35 minutes.
The taste is good, some of it will become French toast tomorrow. The bread is sweet and soft, and like I said reminded me much of challah.
No pictures, it jut looks like a round loaf of bread and I didn't do anything pretty with it.
